Detox Day 9

So I'm a little over a week into my detox and I'm feeling better than ever...Ok maybe I cheated on Sunday Funday, but I'm only human! As soon as Monday rolled around I was back at it..Until Tuesday night at the Heat game (oops). But I just had Vodka Soda (not like I ate a huge steak). So other than a few slip ups, I've pretty much stuck to the plan. I've gotten super creative in the kitchen and I'm loving more than ever my trips to Costco and Publix. When the 21 days are up, I've decided I'm going to give up red meat for a good while. I totally don't crave it and on the contrary I actually get a bit woozy when I see/or think of eating it. My favorite meal thus far is definitely Lunch. Before it would have been Breakfast/Brunch because I'm such an egg fanatic but as you all know, eggs are not something I can eat on the detox. I want to share a few yummy food pics/recipes for those also participating and are getting bored in the kitchen. Here you see a bowl of lentil soup. It's very light and brothy. First I start by boiling the lentils with a couple bay leaves, salt, pepper, diced garlic, garlic salt, and cumin. After a while I add chopped onions, red bell pepper chopped, large diced carrots. Let it simmer on low/medium heat and then season to taste. Add Lime and cilantro to finish. Its very healthy and a great vegetarian option. You can also add snow peas for color.
This is one of my favorite salads. In a bowl whisk together the juice of one large lime, a couple tables spoons of Olive Oil, Salt, Pepper, and Siracha (if you like it spicy). Add diced onions, a grated carrot, diced red bell peppers, cucumbers large dice, avocado, and cilantro. Mix it all together and serve with any dish! Top it with more siracha if you'd like. You taste all of the natural flavors in this salad. It's amazing. Below is a photo sans siracha.
If you are a full time vegetarian, part time detoxer, or a full blown meat eater, these Boca Burgers are truly satisfying for all! Just heat a skillet and cook them a few minutes on each side. If you want the burger effect then eat it with a whole wheat bun or eat it with the salad above. When I had my first bite of these yummy things I was so surprised at how it really tasted like meat. But it's actually soy. DEFINITELY recommend.
